Cam’s Mediterranean Chicken Pitas

2 ½ cups cubed chicken breast

½ cup frozen peas

1 small can sliced mushrooms

1 tsp. sugar

1 small lemon

¼ cup Italian dressing

1 tsp. lemon pepper

1 tsp. Italian seasoning

1 bag of pita bread slices

In a small bowl mix Italian dressing, sugar, Italian seasoning, and lemon pepper. Squeeze lemon juice from lemon into the mixture and set aside. Coat frying pan with Italian dressing (not the mixture, use some more plain Italian dressing) and brown chicken cubes on medium to medium-high heat. Now add the Italian dressing mixture, mushrooms and peas. Fry until thoroughly cooked. Season and/or add more Italian dressing on top if preferred.

Remove pitas from bag and place on microwave safe plate. Dampen a paper towel and place on top of pitas. Microwave for 30-45 seconds. Scoop fried mixture onto pitas and enjoy.

Cam's Chinese Honey Chicken

2 ½ cups cubed chicken breast

½ cup grated carrots

¼ cup sliced green peppers

¼ cup honey

1 tsp. sugar

1 tbs. hot sauce

2 tbs. soy sauce

3 tbs. water

In small bowl mix honey, sugar, hot sauce, soy sauce and water and set aside. Coat pan with preferred cooking oil (vegetable, olive or Italian dressing) and brown chicken breast in pan on medium to medium-high heat. When brown, add honey mixture and green peppers to the chicken. When mixture is thoroughly cooked add sliced carrots to the mixture. Sliced carrots should caramelize to the mixture and therefore it is important that they are added last. For a sweeter taste, pour a coat of honey over mixture. Add desired seasonings. Serve over rice.

Salony Apple-Raspberry Fritter

1 pkg. JIFFY Apple Cinnamon Muffin Mix

1 pkg. JIFFY Raspberry Muffin Mix

8 cups apples (peeled and sliced)

½ cup white sugar

¾ cup brown sugar

1 cup quick oats

¾ cup margarine or butter (can substitute applesauce for butter)

2 tsp. cinnamon & sugar mix

Preheat oven to 350°. Place apples in 13 x 9 pan, cover with cinnamon & sugar mix. Combine rest of ingredients and sprinkle mixture on top of apples in pan. Bake for 30-35 minutes. If crispier top is desired bakes for a few minutes longer under close supervision.
